Chicken Pot Pie

  1. Preheat oven to 400 degrees 

  2. Put bottom dough (thawed, previously frozen puff pastry) in a pie pan and put in the oven for 5-7 minutes

  3. Sauté 1/4 cup of minced garlic, 1/2 cup of diced onion, 1/2 cup of diced carrots, 1/2 cup of peas, 1/2 cup of mushrooms, 1/2 cup of potatoes in olive oil 

  4. Add fresh herbs (rosemary and thyme), 3 tablespoons of butter, and 3 tablespoons of flour (butter first) 

  5. Pour in 1 cup heavy cream, 1/2 cup milk, and 1 cup chicken broth (while stirring) 

  6. Season with salt, pepper, garlic powder 

  7. Add in desired amount of shredded rotisserie chicken 

  8. Add in mixture to the pie pan where the dough was previously in the oven

  9. Put second piece of puff pastry on top 

  10. Make a bow with extra trimmings (optional but very fun and cute!) 

  11. Brush top with beaten egg 

  12. Bake for 25-30 minutes
