Thai Curry

Welcome to my first blog post! Each week I will post a new recipe that is a guaranteed crowd pleaser.

The following recipe can be done with any meat of choice, I have made it with shrimp and chicken.

  1. Season shrimp with salt, pepper, & sweet paprika 

  2. Heat 2 tablespoon coconut or vegetable oil with 1 tablespoon butter 

  3. Add shrimp for 2-3 minutes each side 

  4. Remove shrimp and set aside 

  5. Add a diced white onion, 2 tablespoon of minced garlic, and 1 tablespoon of minced ginger & cook for 2 mins on low heat 

  6. Add a red bell pepper roughly chopped for 3 minutes

  7. Add in 2 tablespoons of tomato paste and 3 tablespoons of red curry paste for 1 minute 

  8. Add in -to your liking- coriander, cumin, red pepper, salt, & pepper 

  9. Pour in 1/2 cup of vegetable broth and bring to a boil 

  10. Add in chopped baby bok choy, 1 tablespoon peanut butter, and 1 tablespoon of fish sauce 

  11. Pour 1 & 3/4 cup of coconut milk and bring to a simmer  

  12. Put shrimp back in with the juice of a lemon  

  13. Add in basil leaves 

  14. Enjoy with any form of white rice (I use microwavable white rice)
